I like this pie. Each slice has only 110 calories and 2 grams of fat. It serves 8, and it is low in sugar as well. Yippee!
Crust
10 whole graham crackers
1 egg white
1 Tbsp unsalted butter, melted
Preheat oven to 350 degrees. In a food processor, grind graham crackers into fine crumbs. Add egg white, pulse to combine. Stir in melted butter. Press mixture evenly into a 9-inch pan. Bake for 10-15 minutes until slightly browned. Remove from oven and allow to cool completely.
Filling
2 packages sugar-free, reduced-fat chocolate pudding mix (4-serving size package, not instant)
1/2 cup nonfat vanilla yogurt
Make pudding according to package directions, but use 3 1/2 cups skim milk instead of whole or 2%. Fold in yogurt. Spread mixture over crust and refrigerate for about 3 hours until firm. Serve with 1 Tbsp fat-free whipped topping per slice.
Through my own experience with this pie, I find that the graham cracker crust requires a bit more liquid than what's listed, so I tend to end up using a bit more butter. I suppose that if I had a blender and could really chop the crackers up more finely, that might not be a problem, but oh well. Also, the directions make much more chocolate than can fit into the pie crust. Eat it. It's low-fat, low-sugar, low-calorie chocolate pudding! If you're creative, you can probably come up with other uses for the filling than just pie, but I've never experimented with it. One way or another, enjoy!
